This Spicy Slaw is tangy with just the right amount of heat.
Ingredients:
- 1 small head of cabbage, finely shredded
- 2 medium carrots, grated
- 2 jalapeño peppers, seeded and finely chopped
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- Fresh cilantro or parsley, chopped (for garnish)
Directions:
- In a large bowl, combine the shredded cabbage, grated carrots, and chopped jalapeños. Toss well to mix.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, cayenne pepper, salt, and black pepper until well combined.
- Pour the dressing over the cabbage mixture and toss until everything is evenly coated. Adjust the seasoning to taste.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
- Before serving, give the coleslaw a good toss and garnish with chopped cilantro.
