Spicy Slaw

This Spicy Slaw is tangy with just the right amount of heat.

Ingredients:

  • 1 small head of cabbage, finely shredded
  • 2 medium carrots, grated
  • 2 jalapeño peppers, seeded and finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Fresh cilantro or parsley, chopped (for garnish)

Directions:

  1. In a large bowl, combine the shredded cabbage, grated carrots, and chopped jalapeños. Toss well to mix.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, cayenne pepper, salt, and black pepper until well combined.
  3. Pour the dressing over the cabbage mixture and toss until everything is evenly coated. Adjust the seasoning to taste.
  4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  5. Before serving, give the coleslaw a good toss and garnish with chopped cilantro.

Serve chilled as a side dish or as a topping for sandwiches, tacos, or burgers.
