Pineapple Pepper Mojito

This sweet summertime cocktail is a fun and spicy twist on a mojito.

Ingredients:

  • 2 oz white rum
  • 1 oz lime juice
  • 1 oz simple syrup
  • 4-6 fresh mint leaves
  • 2-3 slices of fresh pineapple
  • 2-3 slices of jalapeño pepper
  • Soda water
  • Ice cubes
  • Pineapple wedges and jalapeño slices (for garnish)

Directions:

  1. In a cocktail shaker, muddle the fresh mint leaves, pineapple slices, and jalapeño slices together.
  2. Add the white rum, lime juice, and simple syrup to the shaker.
  3. Fill the shaker with ice cubes and shake well until well combined.
  4. Strain the mixture into a tall glass filled with fresh ice cubes.
  5. Top the glass with soda water to your desired level.
  6. Garnish with pineapple wedges and jalapeño slices.
