Peppercorn Pork Stir Fry

This fiery main dish will have you feeling like a top chef because this recipe beats Chinese takeout any night.

Ingredients:

  • Pork tenderloin, thinly sliced
  • Assorted bell peppers (red, yellow, and green), thinly sliced
  • Onion, thinly sliced
  • Garlic, minced
  • Sichuan peppercorns, crushed
  • Soy sauce
  • Oyster sauce
  • Sesame oil
  • Cornstarch
  • Vegetable oil for cooking
  • Cooked rice for serving

Directions:

  1. In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and cornstarch.
  2. Heat vegetable oil in a large wok (or skillet) over high heat.
  3. Add the sliced pork tenderloin to the hot wok and stir-fry until it is browned slightly and cooked through. Remove the cooked pork from the wok and set aside.
  4. In the same hot wok, add a little more oil if needed and stir-fry the minced garlic, crushed peppercorns, and sliced onion until fragrant and slightly softened.
  5. Add the sliced bell peppers to the skillet and continue to stir-fry until they are crisp-tender.
  6. Return the cooked pork to the skillet and pour the sauce over the ingredients. Stir-fry for just a few more minutes until everything is well coated and heated through. The sauce should thicken some.
  7. Serve the peppercorn pork stir fry over cooked rice.
