No summertime picnic would be complete without this sour cream-based potato salad.
Ingredients:
- 2 pounds of red potatoes, washed and cubed
- 1 cup sour cream
- ½ cup mayonnaise
- ¼ cup fresh dill
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 slices bacon, cooked and chopped
Directions:
- In a large pot, cover the cubed potatoes with water and bring to a boil. Cook until the potatoes are fork-tender, about 10-15 minutes. Drain and let cool.
- In a mixing bowl, whisk together the sour cream, mayonnaise, dill, garlic powder, onion powder, salt, and pepper.
- Add the cooled potatoes and chopped bacon to the mixing bowl, and toss evenly until coated with the sour cream mixture.
- Chill the potato salad in the refrigerator for at least 30 minutes before serving.
