Red Potato Salad

No summertime picnic would be complete without this sour cream-based potato salad.

Ingredients:

  • 2 pounds of red potatoes, washed and cubed
  • 1 cup sour cream
  • ½ cup mayonnaise
  • ¼ cup fresh dill
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 slices bacon, cooked and chopped

Directions:

  1. In a large pot, cover the cubed potatoes with water and bring to a boil. Cook until the potatoes are fork-tender, about 10-15 minutes. Drain and let cool.
  2. In a mixing bowl, whisk together the sour cream, mayonnaise, dill, garlic powder, onion powder, salt, and pepper.
  3. Add the cooled potatoes and chopped bacon to the mixing bowl, and toss evenly until coated with the sour cream mixture.
  4. Chill the potato salad in the refrigerator for at least 30 minutes before serving.
