Fried Pecan Bites

Made with crunchy pecans, aromatic vanilla, and sweet brown sugar. These bite-sized treats are perfect for sharing or enjoying all to yourself.

Ingredients:

  • ½ cup pecans, finely chopped
  • ½ cup brown sugar
  • ½ cup of corn syrup
  • 2 eggs, beaten
  • ¼ cup unsalted butter
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 (8 oz) can refrigerated crescent dough
  • Vegetable oil for frying

Directions:

  1. In a large mixing bowl, combine the chopped pecans, brown sugar, corn syrup, beaten eggs, melted butter, vanilla extract, and salt. Mix until well combined.
  2. On a lightly floured surface, unroll the refrigerated crescent dough and press seams together to form a large rectangle.
  3. Cut the dough into 24 equal pieces using a knife or pizza cutter.
  4. Take each piece of dough and press it into a mini muffin tin, forming a small cup.
  5. Fill each cup with the pecan mixture.
  6. Preheat vegetable oil in a deep fryer or in a large pot to 350°F.
  7. Carefully drop each filled dough cup into the hot oil and fry until golden brown, about 2-3 minutes.
  8. Remove with a slotted spoon and drain on a paper towel-lined plate.
  9. Serve warm and enjoy!
