Buttery bourbon crumble topping and sweet peaches make this one incredible summertime dessert.
Ingredients:
- 6-7 medium-sized ripe peaches, peeled and sliced
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup whole milk
- ¼ cup unsalted butter, melted
- 1 tablespoon bourbon
- 1 teaspoon vanilla extract
For the topping:
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- ½ cup boiling water
Directions:
- Preheat the oven to 375.
- In a bowl, mix the sliced peaches, bourbon, and vanilla extract. Pour the mixture into a 9 inch baking dish.
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and mix until smooth.
- Pour the batter over the peaches and spread evenly.
- In a small bowl, mix the sugar and cornstarch together. Sprinkle the mixture over the batter.
- Pour the boiling water on top of the mixture
- Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center of the batter comes out clean.
- Let the cobbler cool for 10-15 minutes before serving. Serve with vanilla ice cream or whipped cream if desired.
