Bourbon Bliss Peach Cobbler

Buttery bourbon crumble topping and sweet peaches make this one incredible summertime dessert.

Ingredients:

  • 6-7 medium-sized ripe peaches, peeled and sliced
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup whole milk
  • ¼ cup unsalted butter, melted
  • 1 tablespoon bourbon
  • 1 teaspoon vanilla extract


For the topping:

  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • ½ cup boiling water

Directions:

  1. Preheat the oven to 375.
  2. In a bowl, mix the sliced peaches, bourbon, and vanilla extract. Pour the mixture into a 9 inch baking dish.
  3. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and mix until smooth.
  4. Pour the batter over the peaches and spread evenly.
  5. In a small bowl, mix the sugar and cornstarch together. Sprinkle the mixture over the batter.
  6. Pour the boiling water on top of the mixture
  7. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center of the batter comes out clean.
  8. Let the cobbler cool for 10-15 minutes before serving. Serve with vanilla ice cream or whipped cream if desired.
